Bières de Chimay

Chimay is one of the world’s most respected Trappist breweries, located at Scourmont Abbey in Belgium and brewing since 1862. Its identity is inseparable from monastic tradition: the beers are brewed under the supervision of Trappist monks, with profits supporting the abbey and charitable work. Chimay’s beers are defined by depth, warmth, and a distinctive yeast character that gives them a rounded, fruity, almost vinous profile.

Chimay Red (Première) is the foundation of the range, a rich, copper‑coloured dubbel with notes of dark fruit, caramel, and soft spice. Chimay Blue (Grande Réserve) is the brewery’s most famous beer, a strong dark ale with layers of fig, plum, chocolate, and a long, contemplative finish that ages beautifully. Chimay Triple (White) offers a brighter, golden expression with lively yeast, gentle bitterness, and a dry, elegant profile. More recently, Chimay 150 (Green) introduced a herbal, slightly spiced character that feels both traditional and modern. Even Chimay Gold, once reserved for the monks, reflects the same house style in a lighter, sessionable form.

Chimay’s commitment to tradition goes beyond brewing: profits support charitable work, ingredients are carefully selected, and the beers are matured slowly to achieve their full complexity. The result is a collection of premium, characterful Belgian ales that feel timeless, balanced, and crafted with purpose.

What makes Chimay unique is its combination of monastic authenticity, consistent craftsmanship, and a flavour profile that is unmistakably its own — rounded, expressive, and deeply rooted in Belgian Trappist heritage.
